There’s nothing more simple than marinated tomatoes, but at the very same time, there’s nothing more divine than marinated tomatoes in pasta, salad, crostini or even served with grilled fish, chicken or meat. A large jar of tomatoes marinating away is an essential item to always have on stand by!
Take a punnet of cocktail tomatoes, wash them thoroughly and pat dry. Slice all the tomatoes in half with a sharp paring knife and place them in a glass mixing bowl. Take about 9 cloves of garlic. Crush them lightly, peel the skins off and add it to the tomatoes. Chop a healthy handful of fresh basil leaves, roughly, and add it to the bowl. Season generously with salt and pepper, add a squeeze of fresh lemon juice and about 150 ml virgin olive oil. Mix gently and either cover to allow the flavours to marry for at least an hour, or spoon the mixture into a screw cap jar with all the oil. Place it in the fridge. It can be stored in the fridge for up to 5 days. Simply allow the tomatoes to come to room temperature before enjoying in pasta, salad or with your favourite dish.
