Mushroom sauce is not tricky to make – you just need to combine the right ingredients to have the perfect, delicious accompaniment for steak, schnitzel, baked potato etc.
Slice half a punnet of mushrooms thinly and heat a knob of butter in a medium saucepan until it stops foaming. Fry the mushrooms until it takes on a golden colour then add a chopped clove of garlic and allow to become fragrant. Add 30 ml brandy and allow the alcohol to evaporate before adding about 300 ml fresh cream and a sprig of fresh thyme. Bring the sauce to a simmer and allow it to reduce until the sauce thickens. Add a pinch of salt and good grinding of black pepper.
Serve this mushroom sauce with grilled meat, baked potato or any dish of your choice. It makes enough for 2 people.
