If you’re looking for a perfect pairing, then look no further. There’s something quite special about the combination of sweet fresh figs and the slight acidic creaminess of goats cheese, and this is perfect as a starter for Christmas Lunch or Dinner.
To make a quick and tasty starter, cut 4 large fresh figs crisscross from the top, but not all the way through to the bottom. Wedge a decent piece of soft goats cheese into each fig and set the stuffed figs on a bed of fresh rocket. Sprinkle caramelised pecan nuts over and drizzle with honey and balsamic vinegar.
