What a weird name for a sauce, right? It’s not quite known where the name comes from or even why it would be called such a peculiar name, but what I do know is that South Africans love them some monkey gland sauce!
It’s easy to prepare as you’d probably have most, if not all, of the ingredients in your cupboard. Fry one chopped onion in a little oil until soft, then add a clove of two finely chopped garlic and allow to sweat for a minute or so. Now, add the following: 125 ml water, 1 tin chopped tomatoes, 250 ml tomato sauce, 125 ml Worcestershire sauce, 125 ml strong fruit chutney, 30 ml brown vinegar and 10 ml Tabasco. Bring the sauce to a boil and allow to simmer for a few minutes until it thickens slightly.
It’s a delicious sauce that can be prepared well in advance and kept in a glass jar in the fridge and served with burgers and steaks.
