By roasting olives you turn something people are fairly accustomed to, into something completely new and really tasty. Make use of your favourite herbs to add something special to the olives.
Take 100 g green olives and 100 g black olives. Keep the stones in and place the olives in a small mixing bowl. Chop a sprig of rosemary and add it to the olives. Add 2 cloves crushed garlic, a pinch of course salt and a pinch of dried chilli flakes.
Mix it all together with a drizzle of olive oil. Then scatter the olives into a baking dish, add 100 g whole almonds and roast the olives in a hot oven for about 25 minutes until the olive start to look a bit dehydrated. Remove them from the oven and sprinkle the zest of one lemon over with a generous grinding of black pepper. Serve the olives with pre-dinner drinks.
