We all have either a drawer or cupboard full of half empty tins and jars of spice rubs. Some for chicken, one or two for fish and then plenty for meat. The problem with this is that we forget which one we used the last time that tasted so good! Try the following spice rub recipe – it’s a versatile rub that can be used on literally everything, even vegetables.
In a large jar, combine 2 teaspoons salt with one teaspoon each of the following: pepper, brown sugar, dried thyme, onions flakes, garlic flakes, cumin, paprika and chilli flakes. Give it a good shake and you’re ready to season away. Mix a tablespoon of this spice rub with a little olive oil to make a paste that can be rubbed on to steaks, ribs, chicken, fish or vegetables.
Store the spice rub in a sealed jar away from direct sunlight.
