Dukka is a spice blend made from a combination of nuts, seeds and spices. It’s Egyptian in origin and can be paired with an array of other ingredient to make delicious dips, spreads or toppings for other dishes. Incidentally, it also makes the most intriguing sweet blend when a little vanilla sugar is added.
Toast together about 125 ml of each: macadamia nuts, pistachio nuts, hazel nuts, walnuts, pumpkin seeds and sunflower seeds. Also add about 4 tablespoon of toasted sesame seeds (toast them separately, because they will toast faster than the rest of the ingredients).
Using either a blender or a pestle and mortar, grind the toasted nuts and seeds to form a course mixture. Add 15 ml ground cumin, 5 ml ground cinnamon, a pinch of clove and about half a cup of vanilla sugar.
Store the dukka in a screw cap jar and use to flavour cheesecake, mousse, baked cream desserts or even cakes.
