A while ago Estelle, a good friend of mine, prepared a lovely dish consisting of ribs and chicken portions, roasted in maple syrup, apple juice and star anise. It was divine! I had a piece of pork belly and decided to prepare it with Estelle’s flavours, and it turned out really great. Add fresh herbs like rosemary or thyme to the dish when roasting for additional flavour.
To serve the pork, I made a lovely pea puree, which adds so much life and colour to the final plate, but the pork will obviously be delicious with something like roasted potatoes, vegetables or even mashed potatoes with whole grain mustard and rosemary. The sides to this dish is open to discussion and the choice is absolutely yours. Happy roasting!
