The flavour that almond adds to baked treats is simply unbeatable. I’m a huge fan of almonds and I really like to add it to many recipes. Whole almonds add texture and ground almonds can be used instead of flour if you’re trying to cut down on wheat.
Something else that I’m quite fond of, is marzipan which is an almond paste made with ground almonds sugar and egg white. It’s mostly used to cover fruit cakes, but lately there are more and more recipes out there where it’s incorporated in a variety of treats. I did exactly that with these pretty little cupcakes – a soft vanilla sponge mixture with tiny bits of marzipan mixed in. As the cupcakes bake, the marzipan slightly melts into the sponge before it sets. As you bite into the cupcakes you have light and fluffy sponge cake with gooey pieces of intense almond here and there. It’s quite a treat.
