These are such popular party table fillers and it’s really not difficult to see why. Firstly the meringue can literally be flavoured with just about any ingredients preferred and secondly, they can be quite fun in adding colour to brighten up a table. Say for instance you have pistachio flavoured meringues with a hint of green colouring, or strawberry meringues in shades of pink.
I didn’t add any flavour apart from my favourite – vanilla! – to the meringue mixture. The sweet meringue is well balanced by the dark chocolate and the creamy filling makes these little treats a really tasty hit.
The meringues can be prepared a few days ahead and they can even be dipped in chocolate and stored until needed. Then simply whip the cream and sandwich them together minutes before serving. No hassle, but smiles all around!
