This is a typical summer dessert to serve at very informal get-togethers. I make it so many times in the summer, it’s not even funny. I really love meringues and grilling or roasting fruit to use in desserts, cakes and salads is also something I really like to do.
Whenever I prepare meringue, I like to make a double batch and keep the left-over cooked meringues in an airtight container. I like to nibble on it with a cup of tea or crush it over vanilla ice cream with fresh berries. And of course, if it’s been standing for a day or two, it becomes nice and sticky inside!
I placed a few nectarine halves under the grill to soften slightly. The vague acidity of the nectarines are great with the sweetness of the meingues – this dessert really is another one of my favourites.
