I love Moroccan dishes just because of the incredible flavour. There’s so much depth in the taste of well flavoured food and the Moroccans definitely know what they’re doing when it comes to flavour and food with character.
This dish is fairly simple, but if you’re looking for awesome taste, then look no further. I like to prepare this dish and serve it as people are sitting down with lovely sour dough bread. It’s a hit every time!
If you’re not a huge fan of sardines, then prepare it with chicken – it’ll be just as great. The chermoulla can be prepared a day or two in advance and just kept in the fridge. Chermoulla is a lovely Moroccan paste made with spices, herbs and oil. It can be used in so many dishes and will add incredible depth to any dish. I quite enjoy adding it to oven roast vegetables – baby marrows, potatoes, onions, peppers, carrots and sweet potatoes. It’s just lovely!
