My Gran used to buy bags full of oat crunchies from the the local supermarket’s bakery section when we visited as kids. It used to be such a treat and I would look so forward to those crunchies during holidays at my Gran. As I grew older and started my own journey through the kitchen, I realised just how easy they are to bake and now you’ll never find my house without oat crunchies!
I love how the butter and syrup bakes into the oats and coconut to form these really delicious and comforting little squares. One crunchie is never ever enough! And I love how chewy they become when they’re left uncovered for a day or so. They really are the best thing to have with tea or coffee – perfect for breakfast or tea time. They are great with some chopped macadamia nuts or almonds added and sometimes I’ll drizzle them with melted white or milk chocolate.
