Oats and raisin cookies
These are cookiesthat you’ll find at farm stalls along the road, at your favourite supermarket produced in mass and at small delis and cake shops made caringly by the bakers of the establishment. I never got what the fuss was about. It’s an oat cookie with raisins. It sounds awfully boring and unappetising. Right?
Nope. Actually, these cookies are pretty tasty and the combination of oats, raisins and some spices bake beautifully together. I baked these cookies for the first time this week and they were just splendid. They stay kind of soft and chewy inside and are perfectly crunchy on the outside. The raisins intensify in flavour while baking and all in all, I really like these cookies. I’m definitely be baking them more often.
