It’s so light and delicate, but the taste is simply out of this world – fruity and creamy. Passion fruit is really such an incredible fruit that can be incorporated in so many dishes and desserts; it makes a really delightful salad dressing, but I love using it in sweet recipes. It’s great to add flavour to tea cakes, hotcakes and also to make cordial. So many different things can be prepared using passion fruit.
I made a light cream based mousse with passion fruit pulp as the main flavour contributor and I have to admit it is simply a winner. Everyone had a generous helping for dessert and after that we all grabbed a teaspoon and finished the bowl off in minutes. It has the most addictive, divine taste.
