I made these lovely, bright peach galettes with puff pastry and some thick custard I had left over from something else. It is so quick and so easy to put them together and in no time you have delightful tea time treats.
I like sweet galettes, because they are so light and make the perfect pastry to serve with tea. You can serve them with a little sour cream if you want, but they are actually divine on their own. Serve sweet galettes as dessert with a scoop of homemade vanilla ice cream and fresh berry sauce. If you have a few left over, they can be frozen in an airtight container. They will defrost perfectly and can then just be reheated in a hot oven for about 8 minutes.
When working with thawed puff pastry, make sure you work quickly, so that the pastry does not warm up too much. If the pastry gets too warm, the baked galettes will be oily and tough. Place the assembled galettes in the fridge while you wait for the oven to get up to temperature.
