A handy tip I could give, is to always be on the look out for items you can use in your baking while out and about or doing grocery shopping, even. You never know what you might stumble upon that could lead to something fantastic out of the oven!
The other day I spotted these cute little pears at the supermarket. Regular Packham pears, just really tiny. Immediately my mind starts going crazy with options of what I could do with these little beauties. I bought a whole bag full, just to be sure I would have enough for whatever I ended up doing with them.
I played around with a simple batter containing golden syrup – not my favourite ingredient, but there’s something poetic about the colour of the syrup and the flavour of the pears. So, golden syrup and pear mini cakes were baked and let me tell you, the aroma fanning from the oven was beyond glorious! A pinch of mixed spice added to the batter perfected these little cakes in flavour and they worked so well with the small pears. Obviously something I would never have thought of, had I not spotted the tiny little pear-lings.
I decorated the cakes very simply, using strips of scrapbooking paper and served them slightly warm with a delicious dollop of creme fraiche.
