Today I met Jos Gmez of Perfect Paella and had a very interesting chat about the pans and other products that they import from Spain. He pointed out to me that in my previous review of the 32cm paella pans, the pan that I thought was supposed to be non-stick, is in actual fact a polished steel pan and not non-stick. I also learned that the stains remaining on the base of the pan after cooking, are a result of heating the pan to quickly. The pan is supposed to to be heated gently and evenly, then it will not stain.
I would like to apologise for my incorrect reporting on this specific pan. I am looking forward to trying the pan out again – this time following Jos’s instructions.
