Seeing that Valentine’s day is almost upon us, I think it’s quite fitting to keep a bottle of red food colouring on hand! I made cute little cake pops, but instead of cake, they’re made with coconut ice.
The coconut ice is a beautiful marbled pink which works perfectly for Valentine’s day and pink cake sprinkles round them them off quite suitably. Preparing the pops with coconut ice makes these pops a breeze to prepare and it’s kind of nice as a summer treat.
Stick the pops into apples after they’ve been dipped in chocolate to dry. They can be serve like this too – it looks seriously cute. If you don’t want to decorate the pops with cake sprinkles, you can always make use of cake glitter coloured cake dust. Or how about a piped chocolate drizzle? There’s really no rules here, so make them perfect for you!
