I like to eat fairly healthy most of the time. So during the week it will be oats for breakfast and mostly fruit and nuts as snacks, but come Sunday morning then it’s treat breakfast time!
One of my favourite breakfasts is eggs Benedict – you know the one with poached eggs, ham and buttery Hollandaise, all on a lightly toasted English muffin? Yeah, that’s the one! There’s so many variations of the the basic eggs Benedict and all of them are pretty amazing. Well, how can anything not be amazing when smothered in Hollandaise and after an entire weeks’ worth of oats every morning, anything except oats will do.
Now to make Hollandaise is not that difficult. There’s even quite a few cheat versions of it, but if you feel a tad lazy, then Maille (the same guys that make the mustard) has a Hollandaise in a jar. Don’t knock it just yet – it’s really quite tasty and sure makes life easy when you don’t want to spend Sunday morning whisking away on a butter and egg emulsion.
I enjoy the combination of poached eggs with smoked trout and the addition of Hollandaise makes this dish indeed a treat of a breakfast!
