Rooibos tea is actually an amazing ingredient to use in cooking. It’s a lovely afternoon drink that can be serve hot or cold, but the flavour it lends to food can be quite special. It’s delicate flavour can be used to flavour cream desserts like parfait, panna cotta and even ice cream. It pairs well with many fruit and I made a sauce with dried fruit, rooibos tea, thyme and honey that I served with pork medallions. It flavoured the pork so well and the combination of earthy dried fruit and fragrant rooibos was perfect.
I think this sauce can be prepared with a variety of dried fruit combinations or even just a single fruit like dried apple or prunes. Try it and see what you think.
