The sun might be out, but it’s never stopped me from enjoying a good curry. I prepared this lovely curry with Madras curry powder that I found at the local supermarket. It is quite strong, but not as strong as vindaloo. There’s no vegetables included in the recipe, but you can always add your preferred favourites. I think carrot, baby marrow and patty pans will be quite nice. Also add a chopped potato or two to bulk it up. Even sweet potato can be a tasty addition.
I prepared a very simple raita to serve with the curry. It’s plain yoghurt to which grated cucumber and a squeeze of lemon is added. It’s a lovely accompaniment to especially hot curries.
