While we are in the midst of heatwave upon heatwave, why not try this gorgeous nougat ice cream dessert. I used fresh raspberries, combined with nougat and double cream to make a beautiful terrine style ice cream. Any other fresh berries can be used to prepare the terrine and frozen mixed berries also work perfectly.
Any nougat that you can find can be used in this recipe. I used macadamia and cranberry nougat and it tasted really great. This recipe is extremely easy to prepare and can be made without the frozen berry part if you want to make just a regular ice cream. The high fat content of the double cream ensures that the ice cream does not form any moisture crystals as it freezes, so that’s why you don’t need to prepare the ice cream in a machine.
The terrine can also be prepared in individual moulds if you want to impress guests even more. Try using loose-bottomed tins as it will make serving a lot easier. Just add a handful of fresh berries as a garnish and watch how everyone goes quite when they dig into this dream dessert!
