Essentially, these are chocolate chip cookies. Really delicious chocolate chip cookies that are soft and chewy in texture. It’s not for everyone, I know, but there’s a place for all kinds of cookies in this world.
A soft cookie dough with a liberal dash of red food colouring and too much chocolate chips to handle, make this cookie recipe an absolute keeper. With every fudgy bite a love affair grows stronger and stronger! Everyone is going just a little gaga for red velvet cake these days, so why not bring our favourite cookie into the loop.
The trick to be able to work with this cookie dough, is to chill it for at least an hour in the fridge. It also makes portioning a lot easier to scoop the dough onto a piece of greaseproof paper and rolling it into a sausage shape. Once the “sausage” has chilled sufficiently, it’s fairly easy to slice even rounds of dough to bake into perfect cookies.
Don’t add all the chocolate chips into the dough while mixing. The cookies look more decadent when a few chips are sprinkled over the top before baking. Although, these cookies are jam packed with chocolate chips and no-one will ever tell you they are lacking in decadence! That’s a promise.
It’s always a good idea to double up the recipe when you’re baking cookies. Make greaseproof wrapped cookie dough sausages with one half and store it in the freezer for up to a month. It’s a life saver to have some frozen cookie dough on hand and this dough is a hundred times better than any store bought frozen cookie dough you’ll ever find.
