When it comes down to comfort food, not much can compare to what the Italians have to offer. Think about pizza, pasta, tiramisu, cassata, gnocchi and so much more. Italian food is hearty, tasty and feels like a giant hug right when you need it the most.
Another Italian dish not to be forgotten, is risotto. That gorgeous rice stew that can hold any flavour and beat any cut of meat, hands down. Well, I made a dessert inspired risotto with nougat and chocolate. The rice is cooked in milk, then vanilla, cream and pieces of almond nougat is added for flavour. Chocolate shavings and an extra bite of nougat on top finishes the dessert off perfectly.
I thought about it afterwards, and poached pears will make an excellent accompaniment to this risotto. Glace fruit or even stewed fruit can also be added to it, but with just the nougat and chocolate, it’s pretty good as it is.
