The chill factor is definitely high this morning and my mind is cloudy with thoughts of steamingthick and fragrant soup. After a weekend of over indulging on sugary desserts and fatty meats,I must admit that the idea of having meat free Monday is not a bad idea and what better way of doing this than with comforting butternut soup. Packed with flavour and warm spices, this soup proves that meat is not always necessary onyour plate. Yeah, yeah, I know some people will disagree full heartedly, but if you are a big meat eater and have meat as part of your meal on a daily base, then I think you can go with this soup and skip the meat this one time. Oradd some crispy bacon as a garnish.By roasting the butternut first, you end up with deep nutty flavours and together with the warm spices, this really is a great recipe. The garnish for the soup is popcorn, popped in lots of butter for extra flavour. I’m going to make a homemade garlic ciabatta to go with the soup, but you can have any crusty bread or even good quality cheese straws will be nice. Enjoy and happy cooking!
