Tomato soup is such a simple dish to prepare, but you have to get the exact balance in seasoning or the taste can be terribly unpleasant. I really enjoy roasting the tomatoes before I make the soup. By doing this, the tomatoes undergo a flavour transformation which is only to the benefit of the people eating the soup. The tomatoes will get slightly sweeter and the soup will get somewhat of a smoky flavour.
I used basil pesto together with a little sour cream to garnish the soup and everyone knows tomatoes and basil are soul mates. This is a lovely soup that can be served as a starter or as a main course. It freezes really well too, so make more and keep it in the freezer as a back up for those lazy days.
