Salad is the perfect meal during summer since the days are much warmer and there is a certain laziness that sets in during this time of year. Salads can be very elaborate meals with added meat, seeds, nuts and cheese or it can be simple, making use of fresh herbs, plump tomatoes and crisp, juicy lettuce.
I’m not very big on always planning meals, but there’s always fresh herbs, cucumber and cocktail tomatoes in my fridge. I love adding seeds, sprouts and lightly steamed vegetables to a salad – immediately it becomes a substantial meal. Salad does not have to be boring – even simple diced cucumber and tomato can make a fabulous salad by adding fresh basil and a squeeze of lemon juice. Black pepper is also great to add some punch to a salad and don’t add salt until you’ve tasted your food. Sometimes the ingredients have perfect balance and flavour and by adding some lemon juice, you can easily go without the salt. Allow the fresh ingredients to be themselves!
