Sichuan is a region in Southwestern China where food dishes are well renowned for their fiery flavour. A combination of sweet, savoury, spicy and sour make Schezuan orientated dishes so unique and also so popular world wide. In many recipes the well known Schezuan pepper is incorporated which has a slight lemony flavour. It also leaves a tingling sensation in the mouth. It’s not a hot or spicy pepper like black or white pepper.
When eating Schezuan inspired food, only small portions are necessary as the food is so pleasing. The flavour combination is quite something to experience. It’s most satisfying as it hits all the taste spots.
Pork and chicken are both popular to pair with Schezuan flavours, but fish like monk fish and often vegetables will also be paired with these flavours.
My recipe is prepared with pork fillet and I serve it with crispy, lemony potatoes.
