When it comes to desserts, the Italians sure know what they’re doing. They’ve got tiramisu, florentines, panna cotta and the delicious semifreddo which is exactly what the name implies – a semi frozen dessert.
Semifreddo is a rich and velvety ice cream like dessert. It’s actually more like a frozen mousse, and because of whipped cream that’s folded into the egg base, it doesn’t freeze quite solid. It remains light and luxurious.
Just like with ice cream, any flavours can be utilised to prepare semifreddo and ingredients like chocolate shards, crushed espresso beans, nuts and pieces of glace fruit can all be added to enhance flavour and make it interesting. I prepared a gorgeous chocolate and espresso semifreddo and served it with butterscotch sauce. It doesn’t really need sauce, but you always find some sauce enthusiast at the table that insists on some kind of liquid dressing to smother whatever they’re eating with.
