A good snack item to have stashed away for emergency cravings is definitely chocolate. Chocolate hits the spot dead centre, every time.
Lately I’ve started making what is known as chocolate bark. Essentially, chocolate is melted, spread over a piece of greaseproof paper and then sprinkled with an assortment of dried fruit, nuts, crushed shortbread, or just about anything else that you might have in the cupboard that pairs well with chocolate. The chocolate is allowed to set again before breaking it up into shards. These shards can now be served after dinner with a good espresso, it can be used to decorate cakes or cupcakes, it can even be enjoyed on it’s own as a simple snack.
I like to crush roasted coffee beans and combine that with toasted nuts. If you don’t want to buy coffee beans just for this, good quality freeze dried instant coffee granules can also be used. It still adds great flavour and a little crunch. These shards of chocolate bark are easy to prepare and they make a great lunch box treat. It’s great that you can adjust the amount you prepare to whatever you have available at any specific moment.
It can also be prepared using white chocolate that can look very enticing when pistachio nuts and dried cranberries are used to sprinkle over the melted chocolate.
