Soup that makes my soul smile
My favourite soup to prepare and to eat is definitely potato and leek soup. The earthy, deep flavour that the potatoes, cooked with the leeks and thyme develop, is truly an unbeatable flavour. Then don’t forget about the knob of butter in which the leeks are fried…. It’s like the leeks melt into the butter and it all becomes one incredibly flavourful base with aromas that will make you stop in your tracks for a second whiff. Then add the potatoes and thyme, and before you know it, everyone around is sitting at the kitchen counter, watching and waiting. Everyone wants a taste of the magic that’s simmering gently on the stove. Aah, potato and leek soup. What a combination of ingredients. What a combination of aromas.
I know most recipes, including mine, calls for cream, but if you don’t want to add it, the soup will still taste just as amazing. Everything’s better with cream, I know, but this one time I would be okay without the cream. Crusty sourdough bread pairs well with this soup and is highly recommended!
