I love red kidney beans and the “meaty” texture they add to dishes. They are perfect to use in vegetarian dishes, but I use them in just about anything I want to bulk up.
This is a fabulous recipe using red kidney beans. The bean cakes have awesome flavour, and their texture is very appealing too. The beans are partly mashed before forming them into cakes, so there’s still whole beans to bit into, which is great for texture in the dish.
I made a simple chilli salsa with the bean cakes, but they can be served as vegetarian burgers, added to salads or used as accompaniment to other food. I think it’ll be really nice stuffed into a pita with lots of salad and some plain yoghurt.
