I find when preparing food for a quick light lunch, the more flavour the better. Weekday lunching is usually very limited on time and therefor food firstly needs to be prepared quickly and secondly, it can’t be heavy and bulky.
Due to the fact that we try to keep it light and the portion not too big, flavour needs to be massive. This doesn’t necessarily mean it has to be packed with chilli, but making use of fragrant spices, fresh herbs and correct seasoning, even a smaller, lighter portion of food can satisfy the palate sufficiently.
I prepared divine little puff pastry chicken rolls using paprika, cumin, coriander, garlic and a bit of chilli. All these flavours work beautifully together to create a dish that really tastes fantastic, but doesn’t leave you feeling full and heavy. Just a pleasing lunch to get you through the afternoon. That’s all we really need, isn’t it?
