One of the my most essential items to always have in the kitchen, is a jar of cocktail tomatoes marinating in olive oil, garlic and basil. Sometimes I’ll add oregano instead of basil and sometimes both. Having these tomatoes on hand makes whipping up a snack or a meal so much easier. And the bonus is it’s all healthy, fresh ingredients that simply add a ton of flavour to any dish.
A really, really easy way to incorporate marinated tomatoes into a dish, is to add them to pasta. Any old pasta will do and to spruce it up a little more, saute a few handfuls of fresh baby spinach and mix it through the pasta with the tomatoes. A generous grating of Parmesan and some flaked almonds rounds the dish off famously and you will feast on this incredibly simple pasta dish.
If the pasta is a bit too much on the vegetarian side for your liking, there is no need to panic. A few rashers of grilled bacon or strips of sauteed chicken will sort it out in no time. As long as you’ve got these garlic infused tomatoes, you’re pasta is set for success, the rest of the ingredients are by products!
