Sweet potato bake
The other day I was standing in the queue at the supermarket, and a lady in front of me were talking on her mobile phone, telling her friend about some sweet potato dish she tasted somewhere. She explained that it was rich and sweet and had incredible flavour. Immediately I’m intrigued – of course. My mind started adding ingredients together and as I was looking at the bag of naartjies (tangerines)in my hand, I had my recipe!
I simply cannot explain to you how incredible this dish smells as it’s busy baking away in the oven. Maple syrup, naartjie, butter and rosemary…all mingling gently and forming an incredible, unbreakable friendship. I kept saying to everyone, “This dish smells like dessert. There’s no way it can be classified as a starch side dish”. It really did have an amazing aroma and it tasted even better. One spoon was not enough as a quick taste. Not this time. I had spoon after spoon and couldn’t get enough.
