A few weeks ago there was a sweet potato festival hosted in Napier where this delicious and nutritious tuber was celebrated in full glory. We started talking about all the delicious things we can prepare making use of sweet potatoes. And the possibilities are truly vast – sweet potato can be used in cakes, pastries, salads and loads more dishes.
I decided to prepare a sweet potato bake which Jared, a colleague, suggested. Cooked sweet potato is mashed and combined with eggs, flour and brown sugar. Once this batter is baked, the result is an extremely tasty, warm delight that’s soft and rich on the inside with a crunchy crust on the outside. I topped the batter with a sprinkling of flaked almonds and light brown sugar before popping it into the oven. This topping adds a sweet and nutty finish to the dish.
South Africans enjoy something sweet with their savoury meals. Especially with a braai, and that’s where this sweet potato bake will perform famously. Or you could eat it the way I did, with a scoop of vanilla ice cream!
