Sweet soya pork with sticky rice
Preparation: 20 minutes
Cooking: 20 minutes
4 x 200g portions pork fillet
80 ml soy sauce
45 ml honey
15 ml olive oil
200 g jasmine rice, cooked according to instructions
1 bag of baby spinach, washed and wilted in a hot pan with a little olive oil
- Preheat the oven to 180C
- Marinade the pork in soy, honey and olive oil for about 20 minutes
- Heat a little oil in a large pan and sear thefillets for a minute or two, then transfer to a roasting tray, pour the remaining marinade over and finish in the oven for 5 – 10 minutes
- Serve the pork sliced with wilted spinach, rice and a squeeze of lemon to lift the flavours
I have made this dish using pork chops and it was just as amazing. So prepare it using whichever cut you prefer and feel comfortable with.
This marinade is also really good on spare ribs and I sometimes use it on chicken too. It really is very versatile and add beautifully balance flavour to whatever you add it to.
