Tagliatelle with seared salmon
Sunny skies in Cape Town and there’s a buzzing change of moods. Even though winter is probably far from over, there is nothing like a26C day, driving along the west coast beach and feeling a warm breeze blowing through the open windows.
Today I made a dish that hints somuch towards summer and the flavours of sunny Provence, that I will be crying if it’s cold andpouring down with rain again tomorrow! I seared a beautiful piece of fresh salmon in a hot pan and squeezed half a lemon over it once out of the pan. I prepared tagliatelle with steamed green beans, roasted red onion and tornblack olives.Simply dressed with some more freshly squeezed lemon juice and good quality olive oil, this pasta and the salmon had a beautiful wedding on my plate!
