A while ago I read on twitter about chocolate mousse made with only chocolate, water and sugar. Obviously I was very intrigued and looked into the possibility of such a recipe. At first I didn’t believe it could be done, but it works. A combination of chocolate, boiled water and a little sugar can be beaten into glorious submissionthat resembles perfect chocolate mousse!
It’s a thick, smooth and delicious chocolate mousse that’s egg free and if you use 70% dark chocolate, it’s very low in lactose too. I like the fact that there’s no whisking of ingredients in 3 different bowls – all the mixing is done in one bowl and it’s a quick recipe that can be whipped up in a flash. I added grated orange zest, but a dash of any liqueur can be added for flavour. Hazelnut praline will also be lovely, either mixed in or sprinkle over when served. It also makes a fantastic filling for chocolate cakes or cupcakes. Just be careful not to beat it too far, as spreading or piping will be tricky.
