Tray bakes are becoming more and more popular these days. I think it’s due to the fact that it’s fairly simple to prepare, dishes are kept to a minimum and serving is uncomplicated. Who doesn’t like to whip up a treat in minutes and have only one bowl to wash up?
The other thing about tray bakes is that you can serve it in slices at morning or afternoon tea, simply dusted with a little confectioners’ sugar, but when it comes to dinner time, simply serve it warm with thick homemade vanilla custard. It makes a delicious baked dessert.
This recipe is very basic, but the really great thing about it is that you can do anything with it. I topped it with plums (which is a nice touch for Valentine’s day coming up), but any fruit that’s in season can be incorporated, as well as any nuts of your choice. This is really one of those recipes that should be kept on the fridge with a magnet so that it’s easily accessible!
