Upside down cake
These cakes are so fantastic! Arranging fruit in the bottom of a tin, covering with cake batter and thirty – odd minutes later, voila! A beautiful cake with fruit slightly caramelised into the sponge. And the flavour is usually unbeatable.
These types of upside down cakes are usually servedat tea timeand are also quite popular made as individual cakes. They are easy and quick to prepare, because they are not often frosted as this will spoil the effect of the fruit. I think these types of cakes are highly underrated and should definitely be baked more often and served at tea parties. It’s so easy to decorated them with just a few rose petals and a ribbon or a pearl pin here and there.
