A while ago I wrote about these amazingly easy peanut butter cookies that can be baked in literally minutes, but that recipe contains eggs and because we have so many requests for egg free cookie recipes, I played around and came up with these really tasty peanut butter cookies. They are entirely suitable for vegans and they are fairly simple to prepare.
I used a little molasses in the recipe (which is available in the health isle of most super markets), but maple syrup can be used instead and will taste pretty good. The recipe yielded about 20 cookies, but I usually make my cookies too big, so you’ll probably be able to bake about 30 decent sized cookies from the recipe. They keep really well if stored in an airtight container, but I doubt that they’ll be stored for a lengthy time, anyway!
