I’m not one to jump at making vegan recipes – usually because you have to leave out all the good stuff. But the other day I had two large sweet potatoes in the vegetable basket. I roasted them until soft and slightly charred then added it to a coconut curry sauce that was simmering on the stove. No meat, no chicken.
The charred flavour of the sweet potato added intense flavour. You don’t even miss the meat. Not that there is anything wrong with not having meat in a dish, it’s only most people wonder if you need financial aid if a meal has no meat!
I love the flavour of coconut milk and the richness it adds to food. Coconut cream can also be used if you prefer and if you can’t go without meat, then lamb cubes or chicken will be excellent in this curry.
