My very first experience of the combination of white chocolate and cranberries, were at Vanilla House Patisserie, where we used to bake white chocolate and cranberry buns. These buns were similar to cinnamon buns and they tasted amazing! They were such a hit and used to sell out instantly.
The sweetness of white chocolate pairs so well with the slight tart taste of cranberries. There’s a beautiful balance in flavour when these two ingredients are combined. It’s also kind of addictive – I can never get enough of it. It works really great in things like muffins, biscuits, fudge and this delicious torte I made.
The torte can be baked in a round cake tin and drizzled with white chocolate ganache or bake it like I did, in a square tin. I sliced the cooled torte into squares and sandwiched it together with Chantilly cream and a drizzle of white chocolate sauce. It presents really well and tastes fabulous!
