The addition of ingredients like yoghurt and buttermilk to cakes result in gorgeous, soft textured cakes with a perfect, fine crumb. Just about any recipe you come across that includes one of these ingredients, you can be assured that the final baked product will be a winning hit.
This yoghurt cake contains lots of lemon zest which goes well with the overall vanilla flavour. It’s a fairly plain cake with no extra frills, but it’s incredibly tasty and makes for an excellent tea time treat or even after dinner treat. It can also be baked in individual mini cakes or cupcakes. The flavour of the cake is allowed to shine by avoiding an overbearing frosting. A simple lemon glace icing is enough to finish this cake perfectly.
Don’t feel you can’t overbear with luscious butter cream or even cream cheese frosting if you feel the need to! It will remain a gorgeous cake with great flavour. Simply slice the cake into two or three layers and fill with your favourite frosting. If baked as cupcakes, ice them with lemony Italian meringue instead of glace icing for something different.
This cake freezes really well, incidentally. So it’s handy to remember that you can pop leftovers into the freezer for the next tea party. Allow for about 2 hours for the cake to thaw completely before serving.
