Whenever you’re in the mood for light, yet flavour packed food, turn to Mexican cuisine. There are so many varieties of tortillas available on the market. Tortillas flavoured with seeds, whole spices like cumin or herbed tortillas. Now, tortillas are simply unleavened water and wheat flour flat breads. They originate in Mexico and are used in many Mexican dishes like burritos, enchiladas and tacos.
I enjoy making a spicy meat or chicken filling, adding beans for extra flavour and texture and then simply wrapping it up in a tortilla. But for a quick and light snack, sandwiching 2 tortillas with a good melting cheese, chopped chilli and some herbs and spices like cumin and fresh coriander, you can’t go wrong. Once sandwiched, place the quesadilla onto a baking sheet and quickly heat through in the oven. Cut it into wedges with a pizza cutter and serve with sour cream and chunky tomato and onion salsa.
