Parmesan crisps are lovely to add to soups as garnish or to salads for extra texture. They are easy to make and can be made up to 2 days in advance. They can be flavoured with chilli, like these, black pepper, dried herbs or spices.
Preheat the oven to 180C and line a baking sheet with greaseproof paper. Spread about 15ml of grated Parmesan in little circles on the greaseproof paper. Top with flavouring of choice and place in the oven for about 6 – 8 minutes. Keep an eye on them! As soon as they turn a golden colour they are ready.
They can be served immediately or kept in an airtight container for up to 2 days.
