Buying marinated feta can be quite expensive and often difficult to find. It’s lovely added to pasta salads, Greek salad or having on a cheese platter. It’s quite easy to just prepare your own marinated feta and keep it in the fridge.
You will need 15 ml lemon zest, 2 sprigs fresh thyme, 1 clove garlic crushed or chopped, freshly ground black pepper and about 250 g plain feta.
Cube the feta into neat, evenly sized cubes and mix it with the other ingredients. Pour about 60 – 80 ml virgin olive oil over and stir gently to combine. Keep the feta in the fridge until needed.
