Often you’ll find whole chicken at the supermarket at really good prices, but you don’t always feel like cooking whole chicken. It’s actually quite easy to portion a whole chicken – all you need is a good, sharp knife and a little practice.
Lay the chicken in front of you and grab hold of the wings, one at a time, and with the sharp knife, slice through the joint to separate the wing from the body.
Then use the knife to cut the breast and the back of the chicken apart so that you have the thighs and drumsticks in one and the breast part on its own.
Cut the drumsticks through the joints to separate them from the thighs.
Cut the thighs into two portions.
Cut the breast part through the middle to separate the two breasts.
